Recently I was invited over to a friend’s for a birthday celebration. She wanted to do a little champagne toast before we headed to dinner. I offered to bring something but wanted to take into consideration we were going to a full meal after champagne. It was just a quick cocktail hour so I wanted something easy to eat and delicious. What goes well with champagne? Well, a lot but you may know by now how much I like cheese but in the middle of Winter I wanted something a little different. So I brought gougères which are essentially cheese puffs. Serve them warm and with a cold glass of bubbly your guests will be happy.
1/2 cup milk
8 tbsp. unsalted butter, cubed
1/2 tsp. kosher salt
1 cup flour
4 eggs, at room temperature
6 oz. gruyère cheese, grated
Heat oven to 425 degrees. Bring milk, butter, salt and 1/2 cup water to a boil in a 4-qt saucepan over high heat. Add flour; stir until dough forms. Reduce heat to medium; cook, stirring dough constantly with a wooden spoon until slightly dried, about 2 minutes. Transfer to a bowl; using a hand mixer ( I used my Kitchen Aid) beat in 1 egg until smooth. Repeat with remaining eggs, beating each one at a time, until dough is smooth; stir in cheese.
Using a large tablespoon, drop balls of dough onto parchment paper-lined baking sheets. Place in oven; reduce temperature to 375 degrees. Bake until golden brown, about 30 minutes. (mine took way less than 30 minutes)
I tried both using a spoon and rolling them in my hands to form balls. I prefer the spoon method. They smell so good in the oven if you have guests coming over they will be in heaven the minute they step inside your house
