Rainbow Sprinkle Cookies

I started making these cookies a few years back and now my family has called them Auntie’s Cookies. It’s easy to make the kids happy at such a young age with a few sprinkles. I originally used this recipe from Dorie Greenspan. She calls for sugar to coat the outsides of the cookies but I started adding sprinkles instead because it was so much more fun. These are a French sablé with sprinkles.

I use my Kitchenaid Mixer to throw this dough together. It can easily make 100 small cookies.

The thing I love about these cookies is that you can keep them in the freezer for a bit and pull them out and bake a few at a time. You need to slice the cookies when they are a little soft, don’t do it straight from the freezer or it will be too hard. You can slice them and store them in the freezer. They travel great, I pack them in a ziplock container and mail them and they are still good a few days later. My family (minus the kids) love to have them with a cup of coffee.

How to Make the Rainbow Sprinkle Cookies

After you have mixed the dough in the mixer, you can make two long logs onto parchment paper. The dough will eventually cut into tiny cookies so you want the dough to be round not square. Your hands might get a little messy in the process, but it’s fun!

Dorie calls to put egg white and coat the sides with sugar. I found it easier to skip the egg white and coat the dough with sprinkles right away. I literally pour the sprinkles on and roll the dough and repeat until the whole log is covered with sprinkles.

In February, I make pink and red sprinkle cookies, in December red and green. You can get creative and do whatever colors you want! I ordered these rainbow ones on Amazon for under $10.

Roll the covered log into parchment paper and twist off the ends to keep it completely covered. You can pop it in the fridge for 3 hours or the freezer for an hour.

Once it is cold and firm, you can slice them. I make tiny, thin cookies to make the recipe last longer. You can go larger and thicker if you want. cook time will vary with the larger thicker cookies.

When you slice the cookies, you want to be on a wood cutting board or a strong steady surface and a large knife. Be careful as you slice!

At the end, the sprinkles I had in the parchment paper were sprinkled on top for a little extra pop. I know my niece and nephew are going to love them! I sent these in a care package just for them.

  1. I am going to make some using red and white sprinkles and send them to my niece at Boston University and green and yellow for my niece at University of Vermont! They’re adorable! Do they spread much in the oven?

      What a cute idea! They will love them. If you scroll down to the bottom you will see a photo of them on the parchment paper. They really don’t spread that much. It is a shortbread type of cookie so they are denser. I make them small bite-size cookie. It all depends on the size of your initial log you make before you refrigerate them. I hope this helps!
