I have had a lot of requests for easy lunch ideas. I can’t think of a more simple lunch than a sandwich. I have great memories of the corner store down the road from my summer camp where we would get these deli sandwiches for $2.50 and they were the BEST. I could never recreate a Myrtle sandwich even though I used the same ingredients of mayo, cheese, turkey, and white bread at home. I recently went back a few years ago with camp friends and the corner store was still there and she slightly raised her prices to $3.00 a sandwich. It wasn’t as good as I remembered but it still brought back great memories.

As my flavor palette has been improved over the years, I still love a good turkey sandwich in the Summer. While in Michigan, we visited this adorable shop for sandwiches and it has inspired me to up my game this Summer when it comes to sandwiches. It is a simple and fun Summer goal to recreate this sandwich at home and of course, I need to make my own bread in my Dutch Oven.

My sandwich was turkey on sourdough with mayo, avocado, pesto, cheddar cheese, lettuce, and onion. A burst of flavors that had me ready for round two the next day.

  1. Love this, so many good ideas. Something I have been doing on repeat is really good turkey, brie, fresh peaches or nectarines and basil. On really good bread in a panini press / griddle. So yum.
