Simple Crispy Potato Recipe
I started making these potatoes a few years ago at my sister’s house. We have something similar at a restaurant in our hometown except they are fried and dipped in BBQ sauce. It was something I missed from home so I whipped these together. You can do these with sweet potatoes or regular potatoes. This is a simple recipe that you can put together in 20 minutes and is a lot healthier than french fries.
Prep
You need a sheet pan with parchment paper
A large glass bowl
Sea Salt
Potatoes
Preheat Oven to 425
Recipe
Slice potatoes thinly on a cutting board
Toss with olive oil in a glass bowl until covered lightly. If they aren’t coated too well you can do a quick drizzle on the pan.
Lay slices of potatoes evenly on a parchment-lined baking sheet
Bake for 20-25 minutes on 425 until crispy
Season with salt and pepper to taste
You can use truffle salt if you want to jazz them up a bit.
Add them to the side of meat or eggs. They go with just about every meal from breakfast to dinner.

Made this for the third time since you posted the story on insta. Love it! I add nutritional yeast for a bit of a cheesy taste and I use a mandolin to slice to make them extra thin and even thickness. Love this! Thanks for sharing!
