If you have been following me on Instagram, you know my Dad fell in love with these biscotti I made on his last visit. He asked for a care package with biscotti once he was home. He loves to have one of these with his morning coffee. It is a simple thing that brings him joy and also me knowing that he is smiling every morning.
These are pretty simple to make it just takes a few extra steps than a typical cookie. Warning, the dough is really delicious and addicting just in case you want to taste the bowl at the end of the process.

Vanilla bean is expensive so I used vanilla extract. Do whatever works for you. I would love to try this with vanilla bean just to see what the flavor difference is.
Slice logs into 1/2 inch pieces.
Lay pieces on their sides for 5 minutes on each side until golden brown.
Let cool and then taste. You can go smaller or larger depending on what you like. My dad loves little bite size pieces.
